Happy Saturday Pizza Tourists,

At Lupa Cotta private events, I often make three crowd-pleasing pizzas: Margherita, Pepperoni with Hot Honey, and Mushroom Ricotta. I typically recommend clients keep it to three types to ensure a smooth flow for the pizza party and maintain the quality of each pie.

The Crowd-Pleasers

However, after serving the fan favorites, I like to throw in a surprise—a funky pizza or focaccia to challenge the guests' palates. A couple of years ago, I created a pizza I call the “Black Fungi Funk” for some celebrity clients. When it comes to pizza, people tend to fall into two camps: the purists who stick with classics like Margherita or Marinara, and the adventurous eaters who crave bold, creative flavor combinations. Some of my clients love seeing how far you can push the boundaries of pizza with unique ingredients.

The Black Fungi Funk

This pizza features a charcoal-infused crust, a black huitlacoche (corn smut) sauce, miso-roasted mushrooms, Oaxacan cheese, and a squeeze of lime. It’s basically three forms of fungi: huitlacoche, Japanese Shimeji mushrooms, and white miso (fermented soybean paste). Needless to say, this pizza is FUNKY—hence the name! The charcoal gives the crust a yeasty, sweet earthiness, making it the perfect canvas for Halloween pizza parties next week.

Ingredients: 

6G Coconut Charcoal 

700G Filtered Water
