Dear Pizza Tourists,
I know Naples, I love Naples, my Aunt was BORN in Naples…it’s the pizza motherland. And the city always reveals something new. Some call it sketchy. I find it exhilarating. If you know where to stay and how to move with the rhythm, it’s one of the most exciting port cities in the world. And you know I love a port city. The restaurants are outstanding, the cooks and Nonnas are extraordinary, their recipes carried through generations.
In this newsletter there will be some musings of a pizza girl, a chef’s guide to Naples, and a little recipe. And I’m going to take you on two trips to Naples. The first is back to 2018, when I lived in Naples for a month and trained at pizza school. The second is from this summer, when I returned in the scorching June heat to eat my way through places I had never tried before. In between, I’ll walk you through a Pizza Portafoglio recipe—a Margherita folded like a wallet and eaten straight out of crumpled paper.
